Ever wondered how to make the best Avocado toast? Have you ever tried this simple lunch or brunch recipe? Well, if you haven’t you really should. There’s a reason why there are so many Avocado Toast recipes out there on the Interweb – it’s delicious, it’s quick, it’s versatile and satisfying, a quick hunger fix. Plus, it quietens that little voice in your head telling you to eat healthily.

But there’s Avocado Toast and then there’s Avocado toast. There are tiny little additions you can make that take it to a whole new level… try them all. You’ll be so pleased that you did. They’re all simple things to do. Even the most diehard fan of the classic, easy avocado toast topping may find a few new things to try and enjoy.

Tips for making the best Avocado Toast

Good bread

Apologies if that seems a little obvious but making toast out of the most basic supermarket offering is unlikely to give you the best results. If however, that’s all there is in the bread bin – go for it.

Interesting bread will add a gorgeous texture and flavour to the finished Avocado toast. There are so many amazing varieties of bread available; seeded ones, various artisan types using unusual flours. Sourdoughs are brilliant and are enjoying a moment just now, or have they always been popular and I’ve not noticed. (It’s ok my sourdough starter is bubbling away as I write – he’s called Dusty by the way due to the mess I make when I feed him.) So, be adventurous and try a different bread.

Choose your Avocado carefully

Again, this may seem a little bit obvious but it isn’t always simple to select a good avocado. It can be disappointing to return home and find that it could take three months or more before it’s ripe. Experience tells me that by then it will have gone straight to ‘past-it’ anyway.

When you’re out there seeking avocados you’re looking for ripe fruit that have a good colour with no obvious blemishes on the outside at least. A ripe fruit will have just a little bit of give under your fingertips. A ripe fruit will always taste really good too.

Making the Avocado topping – variation 1

I know time is short but there are a few things that just have to be done the long way. Using your kitchen knife (carefully) slice around the avocado going from the top, where it joined on to the plant to the base. Use the stone inside the fruit to angle your knife around the whole fruit. Ok – now hold each side of the fruit in your hands and twist in opposite directions. The avocado just comes apart and then it is easy to scoop out the flesh and add to a small bowl, with prefereably a wide enough opening that you can smash the flesh up with a fork. If you’re making this for more than one person you may need to use a potato masher or a stick blender. It’s really easy with a fork as long as the fruit is ripe.

Add the lemon juice which will prevent the avocado from oxidising and turning an unattractive brown colour. Add the salt and a few sprinkles of chilli flakes. Don’t be tempted to skimp on the salt, it’s important in this recipe. The next step is toasting your bread. Toast it so it has a nice amount of colour. Lay both slices on a plate and spread the avocado topping on top. That’s it – that’s your classic Avocado on Toast.

Add Feta cheese and chilli flakes – variation 2

Heaven forbid you’re getting bored with the classic version but if that is so then try a few variations and re-ignite your love of this simple toast topper.

This is as easy as crumbling feta cheese (dairy or non-dairy) over the ‘smashed’ avocado and sprinkling some dried chilli flakes across the top. This is my absolute favourite way of eating it.

Serve with a lightly fried egg – variation 3

This just involves mashing up the avocado as before and then adding a lightly fried egg. This is truly wonderful.

Other Avocado toast Ideas

Ok – so that’s 3 delicious way to enjoy the best Avocado on toast but here are a few more wonderful avocado toast ideas to help you keep on enjoying this healthy fruit. Technically I think it’s actually a berry but you don’t need to know that to benefit from eating it.

  • Poached egg(s) – softly poach an egg or two and add to the top of the toast. Add some fresh or grilled tomatoes and this both looks and tastes divine – all those pretty colours and flavours mingling.
  • Scrambled eggs – these go very nicely with the subtle flavour of the avocado too.
  • Tofu scrambled eggs – this is also a really lovely combination of flavours with the avocado toast.
  • Grilled or fresh tomatoes – cut some tomatoes in half and grill for a minute or two until they just have a few little flecks of colour. Place on top of the Avocado toast with a little pinch of salt to being outthe flavours. Fresh tomatoes are similarly lovely. Use cherry tomatoes in different colours, sliced in half and sprinkled with a few herbs.
  • A small handful of chopped walnuts or a tablespoon of sunflower seeds will add a little crunch. Sprinkle on some herbs such as chopped chives or fresh coriander to add a fresh, bright taste.
  • Add a few toasted pine nuts with a sprinkle of Za’atar spice. (A Lebanese spice blend that is fairly easy to find and is definitely worth the effort.)
  • Squeeze some Sriracha sauce over your toast. Adds heat and a subtle savouriness. This is probably the quickest variation of all.

Make these Avocado toast options vegan

If you are following a vegan or plant-based diet it isn’t difficult to make these options vegan. Obviously, the classic version of mashed avocado with lemon and salt is naturally vegan. It is also possible to enjoy the other versions too by making a few substitutions. There are some nice non-dairy feta cheeses available that will add very similar saltiness and flavours to the avocado spread. Also, tofu scrambled eggs are really good with this too. How to make the best Avocado toast

Avocado Toast makes a great breakfast, light lunch or a satisfying snack. It's creamy, full of great flavour and it only gets better with the addition of more toppings, such as, feta, eggs, tofu eggs or chilli flakes. Always include salt and note that it is best eaten fresh as avocado does tend to darken in colour if it sits around for too long.

Equipment

Ingredients

US Customary – Metric
  • 1 slice of bread choose your favourite
  • 1/2 ripe avocado
  • 1/2 lemon – juice only
  • salt and black pepper – to taste
  • optional: red pepper flakes

With Feta cheese option

  • 1/4 cup feta cheese crumbled, dairy or non-dairy types
  • optional: red chilli pepper flakes

With Fried Egg option

  • 1 egg large, fried
  • 1 teaspoon olive oil

Instructions

  • Prepare the Avocado by removing the skin and the stone.
  • Mash the avocado with the lemon juice in a bowl until it is a soft puree. Add the salt.
  • Toast the bread to a light golden brown.
  • Spread the topping across the bread and sprinkle with a few chilli flakes to finish

With Feta Cheese Option

  • Once you've spread the topping over the toasted bread, crumble about 1/4 cup (30g) of feta cheese on the top. Reduce or increase this amount to suit your own tastes.
  • Sprinkle with chilil flakes and serve straightaway.

With Fried Egg option

  • Gently fry an egg in a non-stick pan with a teaspoon of oil. Cook it to your liking.
  • Spread the avocado topping on the toast and top with the egg.

Note: Avocadoes will oxidise (brown) once the fruit is cut, so always add lemon juice to prevent this from happening.
Store cut 1/2’s of avocado in an air-tight container or bag in the fridge. Add lemon juice to the cut side to prevent too much browning from taking place.
Keep these options vegan by using non-dairy feta cheese and perhaps serve with tofu scrambled egg for a delicious light meal.
