Mincepies and Christmas Cake

First up are mincepies. They seem to one of those ‘love ’em or hate ’em kind of foods but for me Christmas wouldn’t be christmas without them. Any festive baking needs to include them.

But before you get to mincepies, you need mincemeat – a good mincemeat. Why not have a go at making your own, however time pressured you are this doesn’t take long. It’s more of a measuring exercise, than a cooking exercise really. Plus, if you make it yourself you know what’s in it, you can vary the fruits, add nuts and alcohol if you wish. Make this easy recipe your very own.

Whether you use mincemeat to stuff baked apples or in cakes or traybakes, at christmas time the place it normally crops up is in mincepies. Another quintessential christmas food.

Hand them out to visitors, snack on them with your favourite warm drink or dress them up a little with custard or cream as a dessert. Make yourself a batch and try them out for yourself.
