This Chocolate Chip Pancake Recipe is a close cousin of Scotch pancakes. They’re thick, chocolatey with extra chocolate (from the chips) and really simple and quick to make. If you’re a chocolate lover you are going to love them.
Pancakes are a firm favourite in our house. They’re also a firm favourite with me as you can dress them up for breakfast with fruit compotes, berries and all kind of syrups and sauces. You can also dress them up and turn them into a special and delicious pudding. I like that it is such a quick and simple recipe to make.
There’s no waiting for the batter to sit… no beating the eggs for ages. It’s a mix it together, cook and go. I like that in a recipe. If you can handle measuring out the ingredients, you can do this.
Features of the Chocolate Chip Pancake Recipe
There are a few things that you might wish to know about these pancakes.
- they’re thick a little bit like a scotch pancake but light and fluffy.
- they’re really chocolatey as they contain cocoa and chocolate chips. This gives gorgeous melted bits of chocolate as you eat them. Yum!
- can be served to suit different purposes… extra fruit for breakfast…. ice cream for pudding.
- suitable for dairy-free diets if you use non-dairy milk. I’ve made this recipe successfully with hazelnut, almond, oat and soya milk. You will also need to ensure that the cocoa powder does not contain any milk powder and that the chocolate chips are dairy-free.
- the pancakes freeze really well, so you can cook up a batch or two, freeze some and be prepared, saving you even more time.
Tips for success
- use cocoa and not drinking chocolate. Drinking chocolate usually has sugar and sometimes milk powder added to it so the chocolate flavour isn’t as strong.
- adding a 1/2 teaspoon of oil to the batter. This just help the pancakes not stick to the pan. Such a lifesaver.
- cook on a low to moderate heat on your hob. This way the pancakes will cook through rather than overcook and be a little too runny on the insides.
Serving your pancakes
Here are a few possibilities for serving the pancakes. If you have other ideas please let me know. I’m always looking for new things to try.
- Serve with berries; blueberries, raspberries, strawberries or sliced bananas.
- Be bold and drizzle cream over the top or add a dollop of ice cream for a lovely pudding idea.
- Pour over a little of your favourite pancake syrup, maple syrup is our favourite.
- fruit compote makes a lovely fruity sauce.
Storage
These chocolate pancakes will last for 2-3 days covered in the fridge. I would recommend re-heating them before eating so that you get that wonderful melted chocolate hit from the chocolate chips. A few seconds in the microwave should do it.
Freezing – these pancakes freeze well for up to 2 months. Freeze them in a suitable container or freezer friendly bag. First of all, layer the pancakes with squares of baking parchment before freezing, this way you’ll be able to thaw one pancake at a time.
I would still recommend warming them so that you get the experience of the melted chocolate chips. It’s also a good idea to encourage teenagers not to heat them in the toaster, it makes a mess. Wonder how I know that.

Chocolate Chip Pancake Recipe
Equipment
- mixing bowl
- frying pan
- spatulas or wooden spoon
- Measuring equipment

Ingredients
- 1 cup plain flour all-purpose
- 3 tablespoon caster sugar
- 2 tablespoon cocoa powder
- 1 egg, medium
- 2/3 cup milk works with dairy, oat, hazelnut and almond milks
- 2 teaspoons vegetable oil neutral tasting, such as sunflower oil
- 1/2 cup chocolate chips dark or dairy
- pinch of salt
Instructions
- Mix the flour, cocoa, sugar and salt together.
- Whisk the egg into the milk and add 1 teaspoon of oil. Tip the egg mixture into the dry ingredients and thoroughly combine.
- Stir in the chocolate chips.
- Heat the frying pan on a low to medium heat and give it a moment to warm up. Add the other teaspoon of oil.
- Use a 1/3 cup measure (80mls), to scoop out the batter and pour gently into the centre of the pan.
- As it cooks, the edges will set and small bubbles will rise to the surface of the pancake. When this happens, carefully turn it over so that the other side can cook.
- Continue like this until all the pancakes are cooked.

I hope they went well. You’re right drinking chocolate just doesn’t give that deep chocolate flavour. I guess it’s because it contains sugar and often milk powder too.
