This easy Oat Milk Chia Pudding Recipe makes a brilliant dessert or snack. It is truly simple. There’s no cooking involved, no fancy tools, just measuring and stirring. It is quick to put together and then just needs a little bit of time for the chia seeds to do their thing. Team it up with delicious, healthy fruit, fresh or as a compote, and it becomes an even more nutritious treat. Let me show you how.

Is Chia Seed Pudding healthy?

Yes, when something is this deliciously creamy it’s hard to believe but it is – this pudding is healthy. Chia seeds are nutrient-packed. The milk (fortified oat milk) will add calcium and other minerals and vitamins. Plus, if you eat it with fruit you’ll be adding in yet more vitamins and fibre.

Chia seeds are;

  • high in fibre, protein, calcium, B vitamins (B1 and B3), ironm phosphorus, zinc and magnesium.
  • one of the best sources of Omega 3’s in plant based diets.
  • the fibre content of chia helps to keep you full for longer.
  • chia seeds absorb any liquid that they are mixed with so that they naturally thicken any recipe they are used in. In creamy desert recipes like this one it helps to eliminate any need to cornflour, flour, or mixing in cream or eggs.
  • They are neutral tasting which makes them brilliant for combining and mixing with other straonger flavours for a new flavour experience 7 days a week.

What does Chia Pudding Taste like?

Chia seeds themselves are completely neutral tasting. They swell up to many times their original volume when they’re in the presence of a liquid. So, they’re a great way to make a thick, creamy dessert.

Because they don’t have any taste or flavour of their own, you can use this to create all kinds of tastes and flavours. Add in your favourite spices, nut butter, (Take a look at our recipe for Peanut Butter and Chia Pudding.) and the zest of citrus fruit such as lemons, limes or oranges.

These tiny little seeds are nutrient-dense and are one of the few plant-based sources of Omega 3’s so they make a valuable contribution to your diet.

The texture of a Chia Seed Pudding is a little like Tapioca pudding if you know what that is like. If you hate that texture you can always put the chia seed pudding into a blender and blend until it is a lot smoother.

How to make Oat Milk Chia Seed Pudding

If you’ve never had chia pudding before then this is a brilliant place to begin your adventure. Once the seeds absorb the oat milk (other dairy or non-dairy milk may be used instead) – they swell up, resulting in something that’s a little like double cream or thick custard.

It’s the amount or ratio of chia seeds to the amount of liquid used that affects how thick the pudding is. Apologies if that sounds complicated – it really isn’t. But you never know one day you may want to make it thicker still! Just try it – you won’t regret your decision.

Making this recipe for Chia Seed Pudding

This simple chia pudding recipe will create a creamy little pot of loveliness. This makes a single serving chia seed pudding. Feel free to double or triple the amount of this recipe and have this healthy snack ready waiting for you in the fridge for when you need it. Use this recipe as a base for other flavours, portion out individual servings and add a different flavour (think peanut butter, lemon, nutella… add in fresh seasonal fruit or fruit compotes) in to each one. This is such a versatile recipe.

  • Add two tablespoons of chia seeds, 1/2 teaspoon of vanilla extract and a tablespoon of maple syrup to a container with the oat milk. Stir.
    • The seeds are inclined to want to sit on the top of the liquid so after a few minutes and give them another stir. You need to make sure that there are no clumps left. If it does clump up, just give it another good stir.
  • When you’re sure everything is smooth pop it in the refrigerator for a couple of hours to thicken up. If you have enough time for it sit in the fridge overnight it will thicken up even more. (This is what I prefer to do.)

What substitutions can I make?

There are a lot of variations to consider. This is quite an uncomplicated recipe.

  • Oat milk may be my preferred milk to use, I love the flavour and the creaminess but you may use any milk that you have. Plant milks all work well; cashew milk and almond milk are really nice.
  • maple syrup is used as a sweetener which you may leave out if you wish, otherwise add more if you need it sweeter still.
  • you may also substitute maple syrup with agave nectar syrup or honey.
  • add your favourite spices, such as cinnamon or cardamon
  • want chocolate chia pudding? Add a little cocoa (1 tablespoon should be enough) to the mixture and stir well. You may need to add a little more sweetner as cocoa powder can be a little bitter. A teaspoon of vanilla really helps with the flavour too.

As chia seeds are completely neutral-tasting, you may add any of your favourite combinations. Citrus flavours are brilliant but you may need to adjust the sweetness a little. Cinnamon works well as does adding cocoa to make a chocolate version.

Chia Pudding can be made suitable for a dairy-free diet if you use suitable non-dairy milk.

Is this chia pudding recipe suitable for vegans?

This recipe is suitable for vegans and vegetarians. To ensure that you have a plant-based chia pudding make sure that you use suitable milk such as oat, soya or almond milk.

Is this dessert gluten-free?

Chia seeds are 100% gluten-free and quite a little powerhouse of important vitamins and minerals. So, if you need a gluten-free diet then these are ok for you.

How should I serve this Pudding?

You can eat Chia pudding for breakfast or as a healthy dessert or snack.

This Oat milk Chia Seed Pudding definitely tastes like vanilla ice cream and like vanilla ice cream it is even better if it’s served with fruit, fruit syrup or a gorgeous fruit compote.

I scoop this into pretty dishes, usually glass, and top it off with fruit or a mint sprig. It looks so pretty!

Storing Chia Seed Pudding

Chia Seed Pudding will be quite happy in the fridge for about 4 days. (This also depends on the expiry dates on the milk you have used.) Store it in a covered container.

The Chia Pudding will probably thicken up a little more after a day or so. If this is too thick for you then thin it slightly with a little more oat milk before eating with your favourite add-ins. Enjoy!

Oat Milk Chia Seed Pudding

Saintly enough to be breakfast and decadent enough to be dessert. Quick to make and uses just a few ingredients. Add in some fruit for a delicious snack or breakfast treat.

Ingredients

  • 1/2 cup oat milk use preferred type
  • 2 tablespoon chia seeds
  • 1 teaspoon vanilla extract
  • 2 teaspoons maple syrup substitute with agave nectar or honey

Instructions

  • Measure the milk into a container. Add the chia seeds, the vanilla extract and the maple syrup.
  • Stir the mixture and allow it to stand for 5 minutes. The seeds may sit on top of the liquid – this is ok.
  • Stir again to break down any clumps of chia seeds that may have formed.
  • Place in the refrigerator and leave for at least an hour. It is best if left overnight if possible.
  • Serve with fruit. Enjoy!
