It’s incredibly easy to prepare and makes a large jar so that you’ve ‘instant’ breakfast sorted out for days. Breakfast is absolutely the best way to start the day, full of energy and raring to go.

This cereal is so simple to make that you’ll wonder why you ever bought it ready-made in the first place. There are no hidden extras and definitely no hidden sugars. It is full of oats, quinoa flakes, dried fruit, nuts and seeds which provide healthy fats, protein, fibre and vitamins. Plus, if you serve it with fresh fruit and other luscious things, it makes it even more nutritious.

So, plunder the pantry, gather all the ingredients together and let’s get started. Oh – you may wish to check below for suggestions of other possibilities; fruit, nuts, flavourings etc. The precise amounts of ingredients and the exact instructions are below in the recipe box.

Main features of this easy Muesli recipe

This muesli is made in three basic steps;

  1. Weigh out the oats, quinoa flakes and mix with a little maple syrup and olive oil. Then toast in a low oven.
  2. After 5 minutes, add in the coconut flakes and the seeds and bake for a further 5 minutes.
  3. Add this toasted mixture to a large bowl and add in any dried fruits you wish to use. Stir to combine then store in a suitable container.

Why is this easy muesli recipe toasted?

The reasoning behind toasting the oats, quinoa, seeds and nuts is to bring out all the flavours, plus if you wish to add a little sweetness by using maple syrup, this is a good way to do it.

Does this recipe have to be toasted?

This muesli doesn’t have to be toasted, it can just be mixed together leaving out the cinnamon, oil and syrup for a simpler and quicker to-make, muesli cereal.

Substitutions

If you don’t like some of the ingredients in this recipe then it is perfectly ok to leave them out. Why not replace them with something that you do like? There are so many exciting dried fruits and a vast range of nuts and seeds available these days. This could be the perfect excuse to try them.

If you don’t have or aren’t a fan of quinoa flakes then it is perfectly ok to substitute a cup of oats for the cup of quinoa flakes in the recipe.

Is toasted Fruit and Nut muesli gluten-free?

Although oats and quinoa are both technically gluten-free sometimes they are processed in plants that have also processed wheat and other grains. The only way to be sure that your oats are gluten-free is to use certified gluten-free oats.

The issue with quinoa is more complex so if you know that you are sensitive to gluten then make this recipe using all gluten-free certified oats.

How does this help with meal-prep?

Having a ready-made jar of cereal is a life-saver, as you will always have something ready for breakfast, as you dash around the house trying to get out on time.

This recipe will provide 14 servings so, you’ve instantly got 14 nutritious breakfasts ready to go. All you’ve left to do is to add them to bowls along with any other delicious toppings or a simple sprinkle of spice.

Serving Fruit and Nut Muesli

Serve this muesli with your preferred milk and yoghurts, in your favourite bowl with extra chopped fresh fruit, if you like. How about banana, mango, apricots, stewed fruit compotes or berries?

Other good things to add include nut butter. Treat yourself by drizzling some peanut butter, over your cereal. It’s a real winner.

Don’t forget about adding an extra sprinkle of spice to your bowl either. It can really transform the flavours you have in your breakfast bowl. I think cinnamon is brilliant for this, but you may have other favourites.

Storing Fruit and Nut Muesli

Store this cereal in an airtight container, where it will last quite happily for up to 2 months. After that, the flavours will deteriorate a little and may taste a little stale.

Ingredients

US Customary – Metric
  • 3 cups rolled oats
  • 1 cup quinoa flakes
  • 1/2 cup sliced almonds
  • 1/2 cup coconut flakes
  • 1/2 cup mixed seeds

Instructions

  • Pre-heat the oven to 350F/170C/150Fan.
  • Measure out the oats and quinoa flakes into a large mixing bowl. Add in the maple syrup, olive oil, salt (if using) and the cinnamon. Stir well to combine.
  • Line a baking tray with baking parchment and spread out the mixture. You may need two baking trays so that the ingredients can be spread reasonably thinly.
  • Bake in the oven for 5 minutes.
  • Remove from the oven, mix it around a little and add the seeds, coconut flakes and flaked almonds. Mix around a little and put it back into the oven for a further 5 minutes. Check that none of the ingredients are getting too brown. You are aiming for golden flecks on the coconut flakes and a little golden colouring on the almonds.
  • Tip the toasted oat and seed mixture back into the original bowl and add the other ingredients. Chop up any larger fruits such as apricots, figs or dates (if using).
  • Mix well and use your 'cup' measure as a scoop to put the muesli into an airtight container.

I love this recipe and how you integrated pomegranate. It compliments the muesli so well by adding a fresh and juicy element to a heavy dish.
