Of all the healthy breakfast recipes I’ve tried on my family, this is the one that they ask for most. The benefit for me is that they are such a simple make-ahead breakfast. I can leave them in the fridge and there they are in the morning all ready to go. Having a good overnight oats recipe at your fingertips may make the difference between having a good breakfast and going without.
What are Overnight Oats?
One thing they truly are is pretty convenient. With a little bit of forward planning, you can have a delicious breakfast ready to go every morning of the week. I’ll talk more about that later on in this post.
Overnight Oats are sort of a first cousin to Bircher Muesli, which Dr Bircher served his patients at a Swiss clinic back in the 1900s. His original recipe included rolled oats, condensed milk (the only safe milk available in those days), lemon juice and a grated apple. The whole apple was used, skin and core.
The original Bircher muesli recipe has changed over the years and evolved into Overnight oats, a modern take on an old recipe. A recipe that suits using delicious combinations of nutritious seeds, berries and spices.
Essentially, in overnight oats recipes, oats are mixed with other ingredients in a liquid. The liquid is usually a type of milk or yoghurt. They are then left to soak overnight in the fridge or for at least a couple of hours. The oats become gorgeously creamy. These are then usually mixed with spices, sometimes sweeteners and fruit, nuts and seeds. Definitely, a breakfast that’s worth getting up for.
Reasons to Love Overnight Oats
- convenient – you can make a batch of these all at the same time and leave them in the fridge until you are ready to add some extra fruit, yoghurt, nut butter or nuts and seeds and eat them.
- healthy – overnight oats are pretty healthy. The oats, fruit, milk and any seeds or nuts you use all add a good deal of healthy fibre, proteins, minerals and fats. Consider chia seeds, if you include those you are adding Omega-3 to your breakfast and that’s pretty valuable especially if you’re on a vegetarian or vegan diet where the natural sources of this are fairly limited. Use sweeteners such as maple syrup to keep them, refined sugar-free.
- delicious – creamy with lots of lovely flavours that you can adjust to suit your tastes. Plus, it’s satisfying and will keep you full until lunch. What else are they?
- flexible – if you’ve made a store of overnight oat bases… the mix of oats, milk or yoghurt and seeds then when you’re ready to eat it, you can add whatever you fancy at the time. They’re pretty flexible as they can double as a pudding or as a healthy afternoon snack that will keep you full until your next meal. You don’t have to eat them cold either if you don’t want to – warm them in the microwave for a short time. Remember to warm them before you add fruit and any nuts or seeds.
- portable – this is a breakfast that you can take with you. Just pack it into a suitable container with all your additional toppings in there too or if you prefer, pack those separately and away you go.

Carrot Cake Overnight Oats: Ingredients
- oats – the main ingredient of any overnight oats recipe. Use ordinary rolled oats or jumbo rolled oats if you like a little more texture in your morning oat cereal.
- grated carrot – adds vitamins and a little fibre and texture.
- raisins – dried raisins are present for added sweetness and texture.
- cacao – or cocoa, this adds a little chocolate flavour, and if you use raw cacao a few welcome nutrients.
- spices – dried ginger and dried cinnamon which give this overnight oats recipe the unmistakable carrot cake flavour.
- maple syrup – added as a sweetener. Using maple syrup keeps the recipe refined sugar-free so if you need to substitute it for something else then consider agave nectar or date syrup in its place.
- milk – use your favourite type of milk; dairy or non-dairy. This will give the whole recipe a creaminess which is so important to a carrot cake recipe.
Please note that I serve Carrot Cake Overnight Oats, with Greek yoghurt because I think that this gives a nice creamy boost to the recipe. How much you use is up to you so I don’t specify an exact amount. You can eat this recipe with or without the yoghurt but it is lovely when it is included.
How to make Carrot Cake Overnight Oats
- Select a suitable container with a lid for your oats.
- Combine all ingredients, ensuring that everything is blended together thoroughly.
- Refrigerate your mixture, allowing it to soak up the lovely milk and achieve its creamy texture.
- Consider preparing carrots and walnuts in advance to save time. (Keep the grated carrots in the fridge overnight.)
Serving Carrot Cake Overnight Oats
Once you’ve made your overnight oats recipe and left it in the fridge overnight to become creamy and delicious, it’s ready to eat.
- Layering: If you have the time to layer the ingredients this looks really pretty and appealing. Try layering the mixture with yoghurt—whether plain Greek, natural, or flavoured.
- Simplified Option: If time is of the essence, place a portion of oats in a bowl, topping it with yoghurt, grated carrots, and chopped walnuts for added texture and nutrition. It’s just so delicious.
There are two things that you can do if you don’t like food cold out of the fridge.
- The first is you can leave them out on the countertop and let them lose the chill of the fridge, whilst you go and do other things.
- The second is to warm them briefly in the microwave before adding any soft fruits, yoghurt or nuts. (Make sure that the container is suitable for microwave ovens.) Only do this briefly so that you don’t turn it into a bowl of porridge, that may not be what you were hoping for.
How to Meal-prep overnight oats for the week ahead
I have to admit that sometimes it’s a bit of a struggle to prepare each day’s breakfast the night before. Life happens and something has to give. Happily, it doesn’t have to be breakfast. These oats can be prepared up to 4-5 days in advance. You just have to decide how many you need, ensure that you’ve enough containers and ingredients, space in the fridge and away you go.

One thing though – you do need to ensure that any fresh ingredients will remain within their expiry dates for the length of time they’re sitting in the fridge.
Are these overnight oats gluten-free?
These overnight oats are gluten-free if you use gluten-free certified oats. Greek yoghurt should be gluten-free but please check the label as if it’s produced in a factory that handles multiple types of foodstuff there is a slight chance of cross-contamination. So, always check your labels.
Are these overnight oats dairy-free?
These overnight oats are dairy-free if you use non-dairy milk and non-dairy yoghurt.
Are these overnight oats suitable for a vegan diet?
These carrot cake overnight oats are completely suitable for a vegan diet. All you have to do is use suitable non-dairy milk and a suitable vegan-friendly yoghurt in the recipe. Then you’ll have a wonderful breakfast or healthy snack just waiting for you.

Carrot Cake Overnight Oats
Equipment

Ingredients
- 2 cups rolled oats
- 3/4 cup grated carrot medium sized carrot
- 1 1/4 cups almond milk substitute with your preferred type of milk
- 1/3 cup raisins
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 4 tablespoons cacao powder substitute with cocoa if not available
- 3 tablespoons maple syrup
Instructions
- Gather all of the ingredients together.
- In a large mixing bowl, add all the ingredients and stir well to combine.
- Place in the fridge and leave for at least 2 hours but preferably overnight.
- Serve in the morning with greek yoghurt and top it all off with a little extra grated carrot and chopped walnuts.
