Nothing brightens a cold, gloomy day as brilliantly as this Gingerbread Latte recipe does. Coming back from a chilly early morning walk with the dog or just gathering together all your mental resources for the day ahead… this warm, sweet and spicy latte hits the spot.
I do love a cup of coffee, and at the moment it’s this cup of coffee that I love. Gingerbread Latte is so easy to create, the warmth of the ginger, the cinnamon, the frothed creaminess of the milk with the deep rich flavour of the coffee. Mmmmmh!
I’m a decaf coffee person, luckily this recipe works with either type of coffee; caffeinated, decaffeinated and with any blend you like, which includes instant.
What is a Gingerbread Latte?
A latte consists of a shot of espresso coffee, some steamed milk, all topped off with a frothy layer and if you’re lucky a sprinkle of chocolate or cinnamon … maybe even nutmeg. So….
A Gingerbread Latte is a latte which has all the spicy flavours that you find in the most amazing gingerbread. It doesn’t involve any actual gingerbread as such… just the warmth and aromas of those same spices.
Recipe Features
The exact amounts of all the ingredients used are listed in the recipe below. This is just a little more information to hopefully, help you be confident enough to try it. It’s really worth it.
- Milk – dairy or non-dairy. I use oat milk in my coffee, the semi varieties and sometimes the barista versions if I can find it. They both froth but the barista type makes a better, more stable froth that lasts longer on top the drink. If you don’t like oat milk, Almond milk also works well as does dairy whole milk.
- Coffee – I use decaffeinated coffee but this also works with caffeinated coffee. Espresso shots make it special but I make this with instant granules and it’s really lovely.
- Ground ginger – the obvious spice to use in anything gingerbready… warming and aromatic.
- Cinnamon – another warm spice that adds to the flavour.
- Sugar – to sweeten everything and make the flavours sing a little.
Note: It doesn’t contain molasses. This pleases me.
Is this latte suitable for Vegans?
Yes – it is provided that you use plant-based milk that is suitable for use with coffee. Some commercial plant-based milks split or curdle when used in coffee so consult the label and make sure that it can be used for making coffee. Barista blends and some oat milks (the semi version of Oatly for example), almond and hazelnut milks all work well in coffee.
There are also vegan equivalents of whipping cream and ‘squirty’ creams that you can use to make your latte a bit special.
Can this latte be made non-dairy?
Yes, it can, provided that you use a non-dairy milk and cream (if using) that are labelled non-dairy.
How to enjoy your latte
Pour into a favourite mug that you can cradle in your hands and top it off with the frothed milk. Sprinkle a little cinnamon or nutmeg on top and if you’re feeling a little fancy you could swirl a little whipped cream on the top. Finish with a spicy sprinkle (cinnamon, nutmeg or chocolate) and definitely find a space for a little gingerbread man.

How to make a Gingerbread Latte at home
Equipment
- saucepan or microwavable jug, whisk to froth the milk, spoons and mug to serve
Ingredients
- 1 cup oat milk barista style is amazing
- 1/2 teaspoon ground ginger
- 1/4 teaspoon cinnamon – ground
- 2 teaspoon demerara sugar
- 1/2 teaspoon vanilla extract
- 1 espresso coffee shot increase amount to two shots if desired. Or use a heaped teaspoon of your favourite everyday granulated coffee.
Instructions
- Heat the oat milk along with the spices (ginger and cinnamon) and sugar in a saucepan until it is is steaming. If using the microwave, add these ingredients to a suitable jug and heat until the milk is hot.
- Make your coffee either instant or espresso, whichever you usually have. You may want it a little stronger than you'd normally have it.
- Once the milk has been heated, froth it up using either a whisk or a 'milk frother'. This won't take very long. Add the vanilla to the milk and stir to combine.
- Pour the coffee into your favourite mug and top if off with the frothed milk.
- Optional but very nice – finish it off with some 'squirty' cream or whipping cream for some extra awesomeness.
- Sprinkle the top with ground cinnamon or grated chocolate and enjoy.
