Easy Baked Donuts Recipe (with strawberry jam filling)

This easy baked Donut recipe makes a real sweet treat. They're even better than the donut you’d normally buy from the baker. They’re easy to make and are healthier than donuts which are deep-fried in oil. Bake a double batch and freeze some for get-togethers or after school meet-ups.

Ingredients

  • 2 1/2 cups bread flour
  • 1/2 teaspoon salt
  • 2 teaspoon dried yeast suitable for hand baking
  • 1 teaspoon baking powder
  • 2 tablespoon caster sugar
  • 1 egg
  • 1/2 cup semi-skimmed milk luke warm
  • 1/8 cup unsalted butter softened

For coating the donut

  • 1/4 cup caster sugar use icing sugar if you prefer
  • 2 tablespoon butter melted

Strawberry Jam Filling for the donuts

  • 1/3 cup strawberry jam without fruit pieces - remove them if you need to

Instructions

  • Measure the flour, salt, sugar, baking powder and the butter (softened and cut up in small cubes) into a large bowl.
  • Prepare a baking tray for later, either grease the surface of the tray in your usual way or cut a strip of baking parchment to fit.
  • Beat the egg into the warmed milk and add this to the flour mixture. Stir it around with either a fork or a spoon until it begins to come together to form a dough. Keep working the dough with your hands until all the flour is incorporated and you have a rough looking dough. The butter will work into the dough really easily with very little effort.
  • Tip this out onto the work surface and begin to knead it for around 5 minutes until you have a smooth, silky feeling dough. Pop this into a bowl, cover with a cloth and leave it to prove for about an hour or until it doubles in size.
  • After this time, tip the dough out onto the work surface. Knead it again for about 5 minutes and then divide it into 10 equal-sized pieces. Roll them in your hands until they're nicely round and place on a prepared baking tray and cover with a cloth.
  • Heat the oven to 340F/170C/150C Fan.
  • Set a timer for 30 minutes and after this time the dough pieces should have risen a little. Put into the pre-heated oven and set the oven timer for 10 minutes.
  • At the end of ten minutes they should be golden brown. If they're not, allow them to cook for a few minutes more until they are.
  • Remove from the oven and allow them to cool for at least 8 minutes.
  • Pick up one baked donut and using a small kitchen knife with a sharp point insert it into the side of the donut and move the point of the blade from side to side slightly. You're not making the hole where you inserted the knife bigger you're just making a cavity for the jam to go.
  • Do this to all the donuts.
  • Melt the butter. You can do this in a small saucepan or more quickly in the microwave.
  • You need the melted butter to be in a small bowl, with enough space so that you can easily dip the donuts. The sugar needs to be on a small plate.
  • Dip the donuts first in the butter and then roll them in the sugar until they're covered all over. It is better that the donuts are cooler for this part of the process so that the sugar doesn't instantly dissolve and disappear.
  • Once you've sugar coated all of the donuts, add the jam to either a piping bag or a piping syringe.
  • Insert the nozzle into the place where you made the hole and squeeze out the jam. Slowly withdraw the piping syringe as you do so and your donut is now done.
  • Repeat for all of the donuts. Your delicious donuts are now ready to eat.

Freeze: To freeze these donuts - freeze before coating them in sugar and before filling with strawberry jam. To thaw, leave them on the kitchen countertop and then proceed to dip them in melted butter and the caster or icing sugar. Once this is done you can fill them with jam using an icing bag or icing syringe.

Proving the Dough - This may take longer some days and this is probably down to the temperature of your kitchen
Strawberry Jam - I specify a 1/4cup (85g's) of jam but the amount you need to fill your donuts may vary slightly depending on the size of the cavity you create with your kitchen knife.
