Ingredients
 
 

  • 1 1/4 cup rolled oats
  • 1 1/4 cup desiccated coconut
  • 1 1/4 cup plain flour all-purpose
  • 2 tsps baking powder
  • 2/3 cup caster sugar
  • 1/2 cup butter
  • 1 tablespoon maple syrup
  • 3 tablespoon water

Method
 

  1. Preheat the oven to 360F/200C/180C Fan/Gas 6. Line a baking tray with baking parchment.
  2. Add all the dry ingredients in a bowl.
  3. In a small saucepan melt the butter along with the syrup and the water. Stir.
  4. Pour the syrup mixture into the dry ingredients and mix well to combine.
  5. Take a tablespoon of mixture and shape into a ball. Press it down gently to make a cookie shape.
  6. Space them out on the baking tray giving them room to spread a little.
  7. Bake for 10 to 12 minutes until they are golden brown at the edges.
  8. Remove from the oven and allow them to cool for around 10 minutes before moving them onto a cooling rack. (They will be fragile straight out of the oven.)
