- Heat the oven to 350F/180C/ 160 C Fan
- Add all the ingredients to the mixing bowl and stir thoroughly to combine. If making with a mixer, add the peanut butter, egg and sugar and process. Then add the chocolate chips and stir them in. (Prevents the chocolate getting too broken up.)
- Line the baking sheet with baking parchment and roll 2 tablespoon scoops of dough into balls in your hand. Place on the baking sheet.
- Flatten the dough slightly with your hands to make a nice circular cookie shape. If you want to decorate them a little bit use any extra chocolate chips and push them carefully into the top of the cookies. (sprinkle a little flaked sea salt on top if you love that sweet, salty vibe.)
- Place in the middle of the oven and set the oven timer for 10 minutes.
- The cookies are done when they've a little bit of colour around the edges.
- Remove from the oven and allow them to cook slightly for a few minutes as they are fragile when they first come out of the oven.
- Move to a cooling tray and allow them to cool completely.

Variations:
